Celtic Sea Salt comes from an area off the west coast of France on a similar latitude as the Cote d’Azure or Riviera but on the Atlantic side. The folks who do it are called paludiers. The sea water is let into clay pans on each high tide and the wind and sun evaporate the water. They use wooden paddles to scrape up the salt as it accumulates. The resulting salt contains all sorts of goodies absent in typical table salt, sodium chloride. When folks talk about salt being bad for you they are generally talking about sodium chloride.
When I started getting serious about making Chicaoji as good as I could I consulted knowledgeable people in my community. One day on a ferry ride to the mainland I was sitting around with some fellow Lopez Islanders chatting about stuff. I mentioned that I was looking for an excellent salt for this new sauce I was composing. As luck would have it, my friend Nancy was sitting right there and she said Celtic Sea Salt right off the bat. I asked her why this was so and how she knew it. Come to find out she had a salt guru some decades back who did his sacred work and so forth using salt. Go figure.
The take-away message from the salt guru (never did catch the name) was that Celtic Sea Salt was the good stuff. She added that anyone knowing their salt who read on the label that I included Celtic Sea Salt in my sauce would know without looking at any other of the ingredients that I cared for the quality of my offering. Well, I bought some and liked it. I looked it up on the internet from several angles and found it ranks with the best of sea salts. I think it adds a distinctive characteristic to Chicaoji. You consume Celtic Sea Salt and all the benefit that entails with every drop of Chicaoji.
