Apple cider vinegar project

Raw apple cider vinegar containing the “Mother of Vinegar” (ACV) makes up most of the liquid part of Chicaoji. I hope demand for Chicaoji will encourage local production of vinegar for Chicaoji. Also, I hope that this demand for ACV will encourage people to grow fruit and produce other fruit juice products.

Lopez Island can produce food abundantly. Combining our resources to process and preserve this produce has the potential to nourish our community and create jobs. A lack of adequate food processing facilities now limits this potential. It behooves us as a community to create infrastructure that provides opportunities to realize this potential.
